viva

We paid for a CHEAP rental care, through an extremely CHEAP rental car service, because we are CHEAP.. but when I mentioned that we were celebrating our anniversary the nice lady upgraded us to premium... we were ridin' in style through Vegas in this Buick Regal  haha.

And we are the worst at taking pictures, but per request here are the only few that we took. (and if you follow me on instagram, then you've already seen most of these-- sorry!) 

So we were celebrating our 3-year anniversary awwww.....
And we just wanted to get out of this town after a stressful couple of weeks!

As you long time friends, family and followers know, each anniversary we celebrate with a large angus-beef burger and soda at Hard Rock Cafe...

Okay, doesn't that little rat creature totally look like rick, haha-  it's the ears!

We lost some:
$2 at the nickel slots on fremont street downtown

And we ate A LOT, my favorite being Serendipity 3:
Frrrozen hot chocolate (I've always wanted to try it!) and the best chicken tenders- ever.

Fried Oreos and Fried Twinkie-- we are super classy sometimes ;)



And ended our trip with a lovely session at the Las Vegas temple.

We had fun.
Now back to the grind!

Topsy Turvy Apple-Pie





  • Topsy Turvy Apple-Pie
  • Recipe -click for link to allrecipes.com

  • 2 (9 inch) pie shell
  • 1/4 cup butter
  • 1/2 cup pecan halves
  • 1/2 cup packed brown sugar
  • 5 large apples - peeled, cored and sliced
  • 1 tablespoon lemon juice
  • 1 tablespoon all-purpose flour
  • 1/2 cup white sugar
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 pinch salt


  • Preheat oven to 400 degrees F (200 degrees C).
  • Spread butter or margarine evenly on bottom and sides of a 9-inch pie plate. Press pecans, rounded side down, into butter layer. Pat brown sugar evenly over nuts, then lay one pastry shell over brown sugar layer.
  • Place apples in a large bowl and sprinkle with lemon juice.
  • In a small bowl combine flour, sugar, cinnamon, nutmeg, and salt. Mix well. Toss mixture with apples, coating thoroughly.
  • Spread apples into pie plate. Cover apples with second pastry shell. Crimp edges of pastry and make steam vents in top.
  • Bake in preheated oven for 50 minutes. Cool 5 minutes then place serving plate over top of pie; invert pie onto plate. Carefully remove pie pan. Serve warm or cool.

    Sunday thoughts

    It's so easy for us to get caught up in the day to day.  How many of us have countdowns to the next great event in our lives??  I know I do.. 91 days until I am officially done with college, and I live by the countdown recently.  But there are 91 days of living right there! 91 days that need to be enjoyed.


    We can catch our selves constantly saying I will be happy when:
    -I graduate college
    -I get married
    - I can get a job
    -I make more money
    -I have kids
    -I get a new car
    -I have some new clothes
    .... and on and on.  Everyone is a victim of this thought process.  Sometimes we wake up and say, if I just get through this day, I will be better; or TGIF- my life is happy once it is the weekend.  But we have the power to overcome that and LIVE the day to day.  I know I need this message right now, it's a good reminder, and maybe you do too.

    So wake up tomorrow and make it YOUR day. YOUR life. Don't idle away on your own. Learn to love the people that you work with or go to school with that you see day to day.  Give your family a call and be with your family and close friends as much as you can. That is where the joy is!  
    Happiness doesn't start in 91 days 12 hours and 16 minutes. It's now. Now is my life. Whatever I am doing, this is me, this is my stage, it's my performance that matters, not how many people are watching- it's for me and those closest to me.  I will enjoy these 91 days, not just endure them.
